When we decided to share this recipe, we thought about the family that are at home trying new things. This combination is so good and will make great gifts for friends and family.
Ingredients 8 to 10 cups of popped popcorn (Tip: Mushroom style popcorn is preferred) 1 cup of light brown sugar 1/4 cup of maple syrup 2 tablespoons of light corn syrup 1/2 cup of unsalted butter 1/2 teaspoon of salt 2 teaspoons of vanilla extract or maple extract 1/4 cup of Bourbon 1 teaspoon of baking soda 1/8 teaspoon of cream of tartar Directions Preheat your oven to 230º. Add popped popcorn to a silver roasting pan or a large baking pan lined with parchment paper or sprayed with nonstick spray. Add popcorn to the oven while making the caramel mixture. (Tip: This will help with coating the popcorn in the caramel mixture) Combine the brown sugar, maple syrup, corn syrup, butter, cream of tartar and salt in a medium saucepan over medium-high heat. Stir constantly and bring to boil for about five minutes. Remove from heat and stir in the baking soda, vanilla/maple extract, and bourbon until fully combined. (Tip: Be careful the alcohol may cause the caramel to bubble when stirred in) Removed popcorn from the oven and evenly pour the caramel mixture over popcorn Stir gently until all of the popcorn is thoroughly coated. Bake for 1 hour and stir popcorn every 15 minutes. Remove the tray of popcorn out of oven and stir to remove the clumps of popcorn. (Tip: This prevents popcorn from sticking together while cooling) Once cooled, put in an air-sealed bag or container for storage.
